I promise!
So I’m making an effort to cook more often. 1. because of my new diet, due to some of my recently discovered health issues. 2. because i’m sick of eating junk, and frozen meals.
Tonight i decided to make one of my favorite dishes growing up, Porcupine Meatballs. My mouth is watering. Here is the Recipe.
Porcupine Meatballs
1 lb. ground beef
1/2 C. uncooked regular white rice
1/2 C. water
1/3 C. chopped onion
1 tsp. salt
1/2 tsp. celery salt
1/8 tsp garlic powder
1/8 tsp pepper
2 Tbs. shortening (probably can use oil)
For sauce:
1 can (15 oz) tomato sauce
1 C. water
2 tsp. Worcestershire sauce
Mix ground beef, rice, 1/2 C. water, onion, salts, garlic powder and pepper. Shape mixture by rounded tablespoons into balls. Melt shortening (or use veg. oil) in large skillet; brown meatballs on all sides. Drain off fat. Stir together the remaining ingredients, pour over meatballs. Reduce heat; cover and simmer 45 minutes. If necessary, add 1 or 2 Tbsp. of water during cooking. 4-6 servings.
This was the WORST part. I hate touching raw meat. Ick.
