I hate summer July 28, 2011

Have i mentioned that before?  Because I do.  I hate it with a passion.  I spend most of my time in the AC, and try not to go outside if i don’t have to.

So, i’ve been spending my spare time on the newest time suck…Pinterest.  I keep finding all sorts of recipes i want to try!

I found this recipe, and and thought it would be delish on tortillas….

They are cooling off right now, and i can’t wait to dig in!  I’m sure Abby will love them too!

I’m getting my hairs did this evening.  Thinking i may go drastic…I’m not sure yet.  Will post pics when i get back!

I promise!

So I’m making an effort to cook more often.  1.  because of my new diet, due to some of my recently discovered health issues.  2. because i’m sick of eating junk, and frozen meals.

 

Tonight i decided to make one of my favorite dishes growing up, Porcupine Meatballs.  My mouth is watering.  Here is the Recipe.

 

Porcupine Meatballs

1 lb. ground beef

1/2 C. uncooked regular white rice

1/2 C. water

1/3 C. chopped onion

1 tsp. salt

1/2 tsp. celery salt

1/8 tsp garlic powder

1/8 tsp pepper

2 Tbs. shortening (probably can use oil)

For sauce:

1 can (15 oz) tomato sauce

1 C. water

2 tsp. Worcestershire sauce

Mix ground beef, rice, 1/2 C. water, onion, salts, garlic powder and pepper. Shape mixture by rounded tablespoons into balls. Melt shortening (or use veg. oil) in large skillet; brown meatballs on all sides. Drain off fat. Stir together the remaining ingredients, pour over meatballs. Reduce heat; cover and simmer 45 minutes. If necessary, add 1 or 2 Tbsp. of water during cooking.  4-6 servings.

This was the WORST part.  I hate touching raw meat.  Ick.Simmer Down now!Yummmy,  Who’s ready to eat?!?

Slacker… April 11, 2011

Yes, that is me.   Slacker.  I have hardly any time for anything anymore.

 

I’ve been working a lot, and was recently accepted into the nursing program at NAU.  So starting June 6th, i will officially be a real live nursing student!

 

Abigail is growing like a weed.  and is walking, running and talking all. the. time.  I wish i had the energy she does.

She is now 19 Months old!  where is the time going?!?!

And now that she is way more mobile, i’ve been terrible about getting the camera out more..But i’m going to try, and i’m going to try to update this more often!

Can you believe it?  My Little Peanut is growing up!  It’s hard to believe she’s almost a year!  Check out those teeth!

Well, Miss Abigail is 7 weeks old now!  Where is the time going??

I go back to work on Sunday.  I’m so sad to see my maternity leave ending.

Things are going well.  Scott and I are very tired, but we’re working on getting Abby to sleep longer at night.  She’s eating like a pig and growing like a weed!

Here we are at my friend, Nikki’s wedding last weekend!

Well, thats all i have time for now!  Who knew having a baby would make your days shorter?!

Abigail arrived on Friday, September 4th, at 4:52pm.  She was 8lbs 9oz, 20 and 3/4 inches!

Well…It’s almost that time! August 31, 2009

I’m almost 39 weeks!  And my induction date is coming up!

 

We are anxious, excited, nervous and any other emotion you can think of, we probably are feeling it!  So crazy that I’m going to have a child soon!!

I definitely think she has dropped.  And i’m a little more uncomfortable now than i have been.  There’s a big difference between yesterday and today even!
